#1. Almond Milk

Ingredients:
  • Almonds - 12-15
  • Milk - 2 cups
  • Brown Sugar/palm sugar - 2 tsp (optional)
Method:
  • Soak the almonds in hot water for 10 minutes. After 10 minutes, peel the skin of almonds. Keep them aside.
  • Put the almonds in a blender along with a little bit of milk. Grind it to make a very smooth paste. Make sure the almonds are completely ground.
  • Boil the remaining milk in a saucepan for 5 minutes in a low to medium flame. Then add the ground almond paste and sugar. Mix well. Keep it in simmer until it becomes slightly thick.
  • Once ready pour it in a cup and serve.

2. Almond Halwa

Ingredients:
  • 2 cups ground almonds or 200gm
  • 1 cup water or 250 ml
  • 1 tin fat-free sweetened condensed milk or 400 g or any milk that you give your child
  • 1 tablespoon ghee
  • ½ teaspoon saffron powder
  • 1 tablespoon flaked almond
Methods:
  • Soak almonds in water for 30 minutes.
  • Add milk and ghee and place over medium heat. Stir for 20 minutes until the halwa pulls from the pan and has a stretchy texture.
  • Add the saffron and cook for 10 minutes. Remove from heat and allow it to cool slightly. Serve.

3. Almond Cookie

Ingredients:
  • ½ cup Almond powder
  • 2/3 cup Plain flour
  • 2 Tbsp Corn Flour
  • 1/3 cup powdered sugar
  • A pinch of salt
  • ½ tsp baking powder
  • 1/3 cup butter
Method:
  • Sift together- corn flour, plain flour, baking powder and salt in a large bowl and keep it aside.
  • Beat the sugar and butter using a hand blender until they turn fluffy. Add the almond powder to the sifted flour mixture and try to make a soft dough.
  • Wrap the dough in a plastic paper and refrigerate.
  • After a few minutes, take the dough out and roll it to 1/2″ thickness. Use a cookie cutter to make desired shapes. Place an almond on top of every cookie.
  • Bake the cookies in the oven at 170 degrees Celsius for 20-22 minutes.

4. Homemade almond butter

Ingredients:
  • 3 cups whole almonds (always use dry-roasted, unsalted)
Method:
  • Pour almonds into your food processor and process until the almonds go from whole to coarsely chopped to crumbly to finely ground. If they aren't coming together easily, add up to 1 Tablespoon of vegetable oil.
  • Process again until the almonds resemble a thick and relatively smooth almond butter.

Methods:
  • Combine basil, garlic, almonds, and parmesan cheese in a blender or food processor. Blend until almonds are finely chopped.
  • Slowly drizzle in olive oil, and blend until completely smooth. Stop blender or food processor and scrape sides as needed.
